Let's not talk about autumn with a thousand colors, the harvest, the heat of the flame of the Potagè on which to prepare dinner. Pure emotions, caresses on the soul. 

 

Escape to the Belvedereit is a romantic experience to live with your loved one in the Villino del Belvedere, something unique, special and unforgettable. A dive into the past where you can still breathe the atmosphere of the Belle Époque. A place rich in history, poetry and great music, a source of inspiration for the plots of Madame Butterfly, Tosca, Bohème. An exclusive experience for two people enhanced by an exceptional food and wine experience.

 

Wines are served with a meal Box created for the occasion by the Gardenia Restaurant in Caluso, Michelin green star, starred menu made of ingredients, experience, innovation and imagination. In the heart and in the making of the kitchen starred chef Mariangela Susigan there are wild herbs, which he collects among the Canavese valleys, studies, preserves, protects. Herbs that he then uses in his dishes, season after season, with passion, elegance and creativity. Foods rich in diversity, aromas and colors designed for an ideal match with our wines

Restaurant: with a surcharge of Euros 100 Euros (wines not included), instead of the lunch boxes, it is possible to taste the local menu directly at the Gardenia restaurant in Caluso.

Tasting at  Belvedere with local pairings

The Gourmet experience at the Opera takes place along the vineyards around the Belvedere, the places that once belonged to Giuseppe Giacosa, poet and librettist of Puccini.  Accompanied by the arias of the Operas, you will discover the agronomic techniques and the mechanisms that regulate the balance of nature in which the vineyard is immersed, with herbs, insects and microorganisms which in perfect symbiosis create a ideal environment for the vine, a healthy ecosystem highly resistant to pathogens.  ​

Our wines are the result of these natural balances and the experience is designed precisely to enhance their strong character. With this aim, the best products of our territory are used in combination, choosing local producers who share our same ideals.

 

Tasting is a didactic-sensorial experience which has as its goal the exaltation of the food-wine pairing. A true Gourmet experience.


Different flavors and textures will stimulate the senses, as will the traditional products, the cheese from the Valchiusella pastures, the preparations with wild herbs, the rich Canavese charcuterie, alternations of sweet, salty and spicy and according to the season everything that can make the food and wine experience unforgettable.

 

Due to the richness of the combinations, the experience can replace a meal.

Nature, relaxation and excellent wines

The paths of Erbaluce is a food and wine experience combined with an excursion that will lead to the discovery of the moraine, its vineyards and its landscape. 

 

For many centuries the hill has been used for the cultivation of vines: it is a soil very poor in organic matter, but very rich in minerals eroded by the glaciers on the sides of the Aosta Valley Alps. We're going to discover Erbaluce, the native vine of the area, extraordinarily versatile and suitable for obtaining classic method sparkling wines, still and straw wines of extraordinary elegance. ​

Starting from the Vigna del Belvedere, with the support of our guide, you can explore the places of Giuseppe Giacosa, poet and librettist of Puccini. The route winds along paths and cart roads and is structured in 4 stages, in each of which one of our wines will be offered in combination with delicious traditional gastronomic tastings.

Toma and Erbaluce Wine
Wine and Cheese

An experience that combines storytelling, nature, landscape and which will allow you to discover how two of the oldest products of this area are born, the Erbaluce di Caluso and the Toma della Valchiusella.

 

Valchiusella is a magical territory hidden among woods, lakes, hills and small villages behind Ivrea. Here there are several female-run micro dairies where cheeses of the highest quality and workmanship are produced, which smell of the aromas of the wild herbs of which the pastures are rich. But it is with the refinement that the "toma" reach very high quality levels. It is Matteo Villa's mastery that elevates the toma to pure emotion. Its interaction with margarines turns these cheese wheels into true works of art. Matteo's aging cellar over time has been transformed into a true Valchiusella cheese boutique where raw cow's milk toma cheeses from the various mountain pastures of the valley rest and aged for up to 18 months.

The La Toma and Erbaluce sensory experience is lived in the Belvedere vineyard where 12 different types of toma and cheeses are paired with our wines. A guided experience to fully enjoy the symphony of flavors and aromas that will magically envelop your senses
